Solution is remarkably simple: I had the same problem -- all my saved e-mails were unwrapped and went off for kilometers to the right making them hard to read. I suspect the problem came when I received an unwrapped e-mail that infected my in box and all my other saved e-mails. Here's the solution: Scroll all the way to the right side of the unwrapped e-mail, then when the two horizontal arrows appear, click on the mouse and holding down the left click pull the right hand side of the e-mail way back to the left until you have the size you want. Let go of the mouse of course. And that e-mail, and all the others that have been unwrapped and going off endlessly to the right, will be as they were before: perfect.

The only horizontal arrows I can get to appear are those related to resizing the entire mail window- I don't have any option to resize just the preview pane. Resizing the Mail window doesn't change anything about the wrapping- that's really the problem. This is only an issue with some incoming emails. Those containing pasted in spreadsheet data seem to be a problem.
